Quick & Easy 5 Minute Lunch..

For the next two weeks I'll be staying at Terry's as his parents are on holiday. I love it when they go away and we get to house-sit. Not only for the fact we get to spend more time to ourselves and play "house", but also for the fact that I have full use of the kitchen, we decide what we buy to go in the fridge AND that I get to try out any new recipes I have on my mind, or just remake some of our old favourites.
What I'm trying to say, is be prepared to see a few cooking posts pop up over the next couple of weeks ;)

The recipe that I want to share with you today is super easy. Super quick. And super tasty!! 

I had to improvise slightly with the bread, but in fact I think it turned out better than usual. 

Ingredients
•Smoked Salmon
•2 eggs
•2 slices of bread (or if you're like me and realise you don't have any, use a pitta bread instead)

How to make quick and easy poached eggs..
Fill a small bowl half way with cold water.
Crack your eggs into the water.
Place in the microwave for 1 minute - time will vary from microwave to microwave; my eggs took 2.5 minutes. When you're cooking one egg on its own, start at 40 seconds.
Keep an eye on your eggs through the glass and if you can't see through your glass, stop it every 30 seconds and look at them.
You'll know when they're done as they will turn white and when you try to pick them up with a spoon, they won't fall all over the place.
It might sound complicated in my lame explanation, but trust me; when you've done it a couple of times you'll be a master at it... Well kinda!
Pop your bread in the toaster and when it's done add some smoked salmon and your poached eggs.
And that's it! Apart from me explaining how to poach an egg in the microwave, I think you'll agree it's nice and quick :) 

It's amazing, so tasty and just the perfect size for lunch!
